I also face this problem.. when I bake in a smaller pan it rises beautifully but I bake in a larger pan and it sinks in the middle.

A: Some cakes bake up better than others. For instance the chocolate buttermilk cake. With this type of cake fill the larger pans enough to make a thin layer. You can also try using the metal inserts that are supposed to help with that issue. Also try baking a a slightly lower temperature. If they bake too quickly this can happen as well.
