Less is More???
I made this Happy Easter cake for Gabby a little over a year ago which was when I was only a year into this new hobby called making cakes.
Sweetness Overload
Back then I went a little overboard with the decorations. It's part Butter Cream, part fondant and it's loaded with gum paste and fondant decorations.
I was so excited to be making my first stacked cake for a customer. I wanted a little bit of everything I had learned so far on this one cake, basket weave, quilting, gum paste characters etc.
When I finished, I thought WOW I over did it. What do they say "less is more"? Well this quickly became one of my favorite designs that I have made in the past 2.5 years.
It is overloaded with sweetness and charm and all things adorable that remind of Easter Sunday. Its my
Kentucky Derby Bonnet of Cakes.I used Satin Ice fondant and a buttercream using a high ratio shortening, what a difference the high ratio made. My icing was so light and fluffy and crusted so fast.
A Cake Decorating Tip
The hardest part was the basket handle. I made it of gum paste and curved it around a cake pan the same size as the top layer. I believe it was a 6 in pan. After drying for a few days it was rock hard. I inserted 2 "Bobba or Bubble T" straws in the top layer and inserted the ends of the handle into the straws to help support it and help it to stand up.
A Unique Cake Delivery Idea
For delivery I found a great idea that makes transporting cakes a breeze. I used a $6.00 Kmart "curved bottom" Laundry/Toy bail that had rope handles. It was perfect! I lowered in down into the bin which could easily accommodate a 12 Inch cake board.
It had a grooved bottom so I could easily slide my fingers out when done and back in to pick it up. It held the cake perfectly. The bail was easy to carry with the handles and the bottom of the basket was curved so the cake couldn't tip over. Who knew! Necessity is the mother of invention.
Wish I could include a pic but I left my trusty cake delivery basket at a recent delivery too far to go back and get it. Bummer, back to the drawing board.
