Cream Cheese + IMBC

I would do as Lorelia suggested- cream cheese for undercoat and IMBC (Italian Meringue Buttercream)on top. But use a cream cheese icing that is more of a buttercream. I use Rose's (Cake Bible) icing and tweaked it.

Use 1 stick unsalted butter for 8 oz full fat cream cheese, 1 T lemon juice and 1/2 cup xxxx sugar. This multiplies well BUT don't keep multiplying the lemon juice; add the most double it.

I don't add any other flavoring. This hardens up well just like IMBC when you stick it in the fridge so you can frost over the top of it. I have even mixed some together.

However, cream cheese buttercream is softer than IMBC so it's not the best choice for finish decorating and sitting out. It will taste wonderful, trust us on that!

Carrot cake

The best carrot cake ever is just that!! I used it for my niece's wedding cake, and it was so moist and perfect! It had just the right density to make it easy to handle. I put cream cheese frosting between the layers, and buttercream on the entire outside. It was delicious!!
