When putting filling you say to make a edging of icing to hold filling in place. What sort of icing would that be?

Buttercream makes a good edging or dam as we sometimes call it. If you will be putting a softer filling in between the cakes, buttercream will help to hold it all in place because it hardens when refrigerated and slowly comes to room temperature. By the time the guests eat the cake the buttercream is soft and will not interfere with the tasting experience. Hope that helps :-)
