Hi You can use almost any cake for fondant. As long as it holds together well. I would not use an angel food cake or a lite sponge however.

I use all kinds. It helps to have the cakes filled, crumb coated and cold before embellishing with sugarpaste. If you are making a tiered cake, have a strong support system ie. dowels or so that the weight of the cakes above are not actually on the ones below.

Hi i'm glad i found your site i hope you can help me.

I need a good chocolate marble cake for 2 tier and a cupcake they are both cover with fondant. pls can you give a recipe of yours? i will appreciate your help. the customer need them on march 8th. i bake from scratch, but it's hard to find a god recipe online. i use to make marble with vanilla and chocolate cake and swirl it. thank you very much for your future help.

Do you chill the cake before crumb coating it?, and then chill again before the fondant? I think I've done it this way before, but the chilled buttercreme crumb coating sweats through the fondant... what am I doing wrong?

Hi I use chilled cakes, but if it is causing a problem for you, don't chill them as much. For instance, after crumb coating let the cakes warm up a little before final frosting and then only chill long enough to firm it or just put the fondant directly on the cakes after final frosting. if you live where it is humid this could also be a part of the problem. I hope that helps.Try to keep the cakes from going from one extreme to the other. :-)

eggless version of your carrot cake recipe

You have a fabulous website & such an excellent portal for clarifying doubts & queries on baking ...i just wanted to know if you could please give me an eggless version of your carrot cake recipe which is to be used as a base cake with a fondant covering. I live in India & many people request me for eggless vegetarian base cakes for fondant cakes ... Also , a 2nd query - is a red velvet cake heavy enough to be used with a fondant covering ? Thank you !

eggless version of your carrot cake recipe

Further to my previous query , i was scouting the internet for good egg substitutes for cakes ...would i be able to replace the 2 eggs required in your original carrot cake recipe with yogurt ? The substitution would be 1/4 cup yogurt for 1 egg...so for 2 eggs may i use 1/2 cup yogurt ? Some websites also mention the use of 1/4 cup yogurt + 1/2 tsp baking powder to substitute 1 egg ...so, should i add this extra baking powder along with the yogurt to substitute the eggs in your original carrot cake recipe ? Looking forward to kind reply please !

Hi, I was reading your comments on which cake to use for Fondant and found these to be very helpful, So thanks :).

I was just wondering, Should i put the Buttercream AND/OR Ganache in the layers, THEN Crumb coat and THEN refrigerate before covering with Fondant. As in, Wil lthe Buttercream or Ganache be ok after being in the fridge for a few hours ?

Meg, Mix melted white chocolate into your buttercream and use that for a crumb coat or for a finishing frosting.

You should not have a problem with chocolate showing through fondant as long as the fondant is thick enough. I have done fondant over dark chocolate ganache.

here is a red velvet cake recipe. Just make the cakes, get them cold, fill frost and apply fondant. there is no special fondant red velvet cake recipe. Pretty much all cakes will work when covering with fondant. Thanks Here is the link to that page here on the website. recipe

carrot cake multiplid I would say multiply the original recipe (in the video) times 3 or 4 . Times 5 makes a larger wedding cake.

Hi You can use a light and fluffy cake as long as you fill it with the proper filling and use the correct doweling. The dowels will take the weight off the cakes below. Hope that helps

I'm starting a cake project i like working with fondant

But actually i have a problem with my cake . I'm not really happy with it. Some people told me u have to work with sponge cake chocolate and vanilla that i found at my cake supplier that i get i dd 600 grams eggs and 200 gms water with a ready chocolate cake . I like to add chocolate sauce and buttercream in the middle but last cake i made was 2 layers 16cm vanilla cake and 20cm chocolate prepared a day b4 almost collapsed b4 starting the birthday and the fondant was destroyed.
Any advice to help me in getting a moist and firm cake to work with .

A: It may have been the chocolate sauce that caused the problem or at least part of the problem with your cakes. Try my white wedding cake recipe or the chocolate stout cake. Both are made with butter and are firm. use cold cakes and don't over do the filling. Hope that helps.

Dulce de leche filling for two tier cake

Good evening, I have a request for 2 tier cake cover with fondant to be filled with dulce de leche . Im trying to find a proper recipe for a good cake and filling that hold the fondant and also be tasty. The cake is going to be in an outside party in Texas heat and humidity at least half an hour - hour. Can you recommend a good recipe for the cakes and for the filling ? Thank you 😊

A: Hi Dana, I would recommended either my white wedding cake recipe which is a butter cake or the chocolate buttermilk recipe. Be careful with Dulce de leche as it can be very slippery. I had only one cake accident in my career and it was a wedding cake with this as a filling. I would recommend making it as thick as possible and crating a good thick dam around in between the layers to hold the cakes together. use dowels to keep the top cake from pressing down on the bottom one. Hope that helps.

Hi so if I choose to make orange cake milk is no longer part of the ingredients and substitute it with orange juice? Also can I use cream cheese brownies as base cake and cover it in fondant? Thanks

Yes The OJ replaces the milk entirely for the orange cake. Not sure about a brownie base though.
