Prepare two or three 8 inch or 9 inch pans with shortening and a dusting of flour plus waxed or parchment paper lining.
Combine the mashed Bananas with the lemon juice. Cream the butter with the sugar until light and fluffy. Beat in the eggs one at a time and then stir in the vanilla. Scrape the bowl. beat in the dry ingredients alternately with the buttermilk and vanilla. Scrape the bowl. End with the flour mixture. Scrape again. Stir in the bananas and lemon juice. Fill your prepared pans 1/2 to 2/3 full. Bake at 325-350 degrees depending on your oven.

From Pillsbury-The Complete Book Of Baking. Makes a 13 x 9 inch pan. This is a nice picnic or family style sheet cake. Preheat the oven to 350 for a regular oven 325 for a convection.
Combine sugar, butter, eggs and mix well; Stir in buttermilk, bananas, and vanilla; blend well.
Stir in flour oats baking soda and salt; mix well. Stir in chocolate chips. Spread the batter in pans and sprinkle with chopped nuts if desired. You can also add the nuts to the batter.
Divide the batter evenly between the pans. Smooth the batter level, then spread it slightly from the center to the edges.
Cool the cakes in their pans on a rack for 10 minutes. Then invert onto racks.

In a large bowl, cream together the butter and sugar. Beat in the eggs, then milk, vanilla and pineapple, along with the juice from the can.
In another bowl, stir together the flour, baking soda, salt, and cinnamon, beat into the creamed mixture. Stir in the bananas.
Turn the batter into the prepared pans. Bake at 350 for 1 hour and 10 minutes, or until the cake tests done with a toothpick.
Cool the cakes in their pans on a rack for 10 minutes. Then invert onto racks.
